The farm have belonged to Valdes family for three generations and mr. Luis bought it from his father and uncles in 1999. On the size of 21ha there are around 142 thousand coffee trees of Caturra, Castilo, Colombia and Ping Bourbon varietal.
Not long ago Luis started to experiment with processing and natural processed coffees. He uses the Brix refractometer to make sure the sugar content is high enough for natural processed coffees.
Our lot is only Caturra to highlight the quality this varietal stand for. Cherries were washed and sank in the tank with water to sort out the floaters ( unripe cherries ) then the whole cherry with the skin was fermented in a tank for 12-15h over a night.
Drying was on the African beds for 30-35 days with regular turning and controlled temperature of 40°C
